Quite the weekend...

What do you get when you add a wedding, a football game (1st of the season, in fact) and a holiday?!?  You get an A-mazing weekend of fun. 

Friday night we went to a wedding with great friends and had good times!!  The setting was perfect, the food was fantastic and the friends were the perfect start to the weekend-o-fun.  We kicked off our Saturday pretty early, making our way to Atlanta for the season opener for Auburn and Clemson.  Once again, we had amazing food, fun memories with friends and plenty of laughs... which included Auburn's performance against the Clemson Tigers.  While I am no way a fair weather fan of the Auburn University Tigers,  it was a disappointing loss at the Georgia Dome and made it a not-so-fun time.  That is until we were on our 3 hour tour home on the Marta.  What we didn't know was the dragon-con convention was also being held in Atlanta.  So as forged our way back to our hotel, we got to experience Atlanta's public transportation system with 30,000 tiger (Auburn and Clemson) fans as well as animals, creatures and people who work in the zoo.  While wrong trains and long waits made the trip ridiculous, we definitely had many laughs.

To top the weekend off, we were able to make our way home from Atlanta and do....NOTHING!!  Since yesterday was Labor Day, SJB and I both had off and it was wonderful.  We were able to get things done that during the week, we can't seem to fit it in the schedule.  SJB also got to get a round of golf in before the busy week kicks back up.  We have been narrowing down some more house choices that we will hopefully see this week, so all in all, it was a great (long) weekend. 

Oh... and bulldogs in Mississippi.... get ready!!  The tigers got their loss out of the way and are headed to Starkville!!

A Shower for Eli

This past Sunday, some friends and I hosted a shower for sweet little Eli Veres and his mom, Adrianne:).  Adrianne and I go way back to our camper days at Seale Harris (I was her first friend at camp:)) and it is so exciting to be welcoming little Eli into the world, in just a few short months!  It was great seeing friends, catching up on everyone's lives and celebrating a new life that is already so loved!   Adrianne got some GREAT gifts to welcome Eli into the world!  While we showered Adrianne and Eli, all the men played an intense game of paintball.  I am not sure who had a better time, considering we didn't see them for about 5 hours.   Here are just a few memories from the shower!

Peanut, Peanut Butter...

COOKIES!!

Yum, Yum, these are good.  Try this simple recipe and soon you will enjoy heaven in your mouth. 

1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
1/2 teaspoon vanilla
1 1/4 cups all-purpose flour

In a large mixing bowl beat butter and peanut butter with an electric mixer on medium to high speed for 30 seconds. Add the granulated sugar, brown sugar, baking soda, and baking powder. Beat until combined, scraping sides of bowl occasionally. Beat in the egg and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. If necessary, cover and chill dough about 1 hour or until easy to handle.
Preheat oven to 375 degrees F. Shape dough into 1-inch balls. Roll balls in additional granulated sugar to coat. Place balls 2 inches apart on an ungreased cookie sheet. Using the tines of a fork, flatten balls by making crisscross marks on top. Bake for 7 to 9 minutes or until bottoms are light brown. Transfer to a wire rack and let cool. Makes about 36 cookies.
**I decided to make them extra yummy by adding some chocolate "drizzle."  Only decorated some of them since there are weirdos that live with me that don't like chocolate:)

Yummy Yum-Yum!!

Here is a tasty little dinner that STUART whipped right up!!  Perfect treat for me after a long day's work. 

1.  Grab a pack of Zattaran's Etouffee mix & follow directions to create sauce.



2.  Add crawfish & let simmer.

3.  While etouffee is simmering, cook rice. 

4.  Plate and enjoy!!



**Despite the fact that it looks somewhat like baby poop, it tastes phenomenal!!
